Spaghetti Squash Spaghetti

Serves 4


  • 2 medium sized Spaghetti Squash
  • 1 tbsp Coconut oil
  • Cinnamon
  • Salt
  • Pepper
  • Pasta Sauce of your choice
  • Nutritional Yeast
  • Daiya Mozzarella Cheese


  1. Preheat oven to 375′f
  2. Halve and scoop out seeds and guts from spaghetti squash.  Place cut side up on baking sheet and drizzle with oil-izzle.  Season with salt, pepper and a light dusting of cinnamon.  Bake for one hour +/- until you can stick a fork easily through.  Let cool.
  3. Scoop out insides of the squash and flake with fork to achieve noodly-goodness!  Top with your sauce of choice – the meatier the better – and nutrition yeast and cheese. I usually give mine a quick zap in the microwave for about 60 sec to get the cheeses oooy-goooy.
  4. Enjoy
