chia + quinoa cereal bowl

Chia/Quinoa Cereal bowl

Growing up, I was the kind of kid who preferred more sophisticated grown-up cereals. Corn Flakes, standard Cheerios, Shreddies and Rice Crispies were perfect for my high fibre, low cholesterol diet at the age of ten. I got through a fair portion of the last year of college living off the Seinfeld classic any-time-of-day meal.

To round things out and get closer to a whole-food diet, I’ve used my liscence as a food artist and Holisitc practitioner to do cereal right.

One banana
Pinch of cinnamon
1 Tbsp Chia Seeds
1/2 Cup Vanilla Almond Milk

Mash or purée your Banana to desired consistency. Add in cinnamon, chia seeds and almond milk and stir well. Cover and store overnight in fridge.

1/4 Cup Quinoa
1/2 Cup or more of desired liquid –
Almond Milk, Coconut Milk or straight up water

Add liquid to a small pot and bring to a boil. Combine Quinoa and turn down to simmer, covered for 10 mins.

In two bowls, separate your overnight chia pet mixture, top with hot cooked quinoa, berries, nuts or seeds of your choice. You can also add more milk here if you want more of a cereal/less pudding consistency.
